Story
Matagalpa enjoys spring-like weather all year round, with temperatures between 26 to 28 °C and average rainfall between 1,200 to 1,900 mm – the perfect climatic conditions for growing cocoa.
Johe® is a fine cocoa variety offered as part of Ingemann’s micro-lot collection. A small group of about 35 producers contributes to the micro-lots.

Acriollado cocoa variety made of a blend of the diverse genetics' varieties available in the region
Post Harvesting Process
The beans are placed in tiered wooden boxes to undergo a long fermentation process with 2 to 3 turns and a slow drying according to Ingemann post-harvest protocols.
